I have newly planted Aucuba Japonica and the leaves are dark glossy green but no evidence of the attractive yellow speckling. Is this because they are still young plants?

I'm afraid not - if your plant is plain green, that's how it will stay. Spotted laurel (Aucuba japonica variegata) is spotted right from the start, so you've either managed to find a plain green version, or you've bought something like Aucuba salicifolia, or its not Aucuba at all, but Prunus laurocerasus, the cherry laurel. A photo would be useful for proper ID, but if you wanted the spotted version, suggest you return it and exchange for the right one.
