Will fresh peppers freeze ? I have a glut of peppers and chillis and would like to know the best way of preserving them.

yes - wash and slice the peppers (obviously removing the seeds), blanch for 2 minutes, cool and freeze. If you only want to store them for a short while, leave out the blanching process - the only reason its done is to preserve colour. They won't be crisp when they come out of the freezer though, so best used in casseroles or soups.

Similarly, wash chilli peppers, chop the green end off, blanch 2 minutes and freeze. Regarding chilli peppers, I think a lot of people dry them, or put them olive oil in a jar, but I've no idea how to do that.

Thank you Bamboo. That's most helpful. I wasn't expecting to get so many, but it seems a shame to waste them. They will do nicely in soups etc in the winter time. I love tomato and pepper soup.

Its been a wonderful year, I freeze them too and tomatoes, ideal for chilli and spag bol.

I have some from lastb yaer and the chillies haven't lost any of their potency either.
I too have a glut of cherry toms. I freeze them on an open tray and then bag them as 'marbles'. easier to select just what you need.

Yes I shall definitely be freezing some peppers. Don't usually freeze tomatoes, haven't got a lot of room for those as well. But I am very pleased with my harvest this year, its lovely when you have enough to do something with isn't it. Have just picked most of my apples too, as the birds are getting at them, plus a few slugs and snails up the trees, so decided enough is enough and shall be busy now with those. At last apples to put with my blackberries.

I pour boiling water over frozen toms and the skins slip off, they need a squeeze of puree though for a rich sauce

Tomatoes stewed in olive oil and garlic. Delicious and freezes well.
