On firmer ground here - onions

Once again the onion sets I put in last September did well. I have 21in the garage and about 17left in the plot, out of the 40 I set.
But 4 of them have very thick, dark green "stems", and 1 of these is very thick just above the onion. See pics.
I'm told these 4 are inedible, despite 3 not being thick.
Can anyone explain ? Thanks.

The thick green stems could indicate bolting - producing a flower stalk. Once they produce flowers the onions turn yucky. This typically happens the 2nd year.

I noticed the flower stalks very early, there were only 5 and broke them off.
