When should I thin out my baby lettuce and can I transplant them?

Lettuce seedlings don't usually transplant well, unless they are grown in an open compost. Otherwise, the force needed to remove them from the soil breaks too many roots. I would let the seedlings get a few more leaves, thin them out, and use the thinnings as microgreens.
