i'm looking to prune my apple tree this autumn, it has grown to about 20feet high but not very bulky , I would like to get it to about 8-10 feet high. any suggestions??

I would hire an arborist to do that, since whether or not it can be done is dependent on the exact structure of the tree. I couldn't give you general rules for the process. Likely, it will take skillful pruning over at least 3 years to complete the job.

If you ever plant another check the rootstock its on before you buy. Some will produce tall trees and some small ones.

True! It takes real skill to keep a full sized apple down to 10 feet tall and still get fruit.
