This is my first time growing potatoes, I bought seed potatoes and planted them in potato bags. Everything went well and now it is harvest time. My Question is, how do I tell which potatoes are the seed potatoes I planted. Are they safe to eat? I don't want to accidentally eat one if they are not safe to use.

The seed potato that you planted will be a soft mushy shell. There is no way you can mistake them. Enjoy your spuds, remember that they will cook a bit faster than shop bought.
