Zucchini Loaf


I’ve been asked for the recipe for my Zucchini Loaf….so here goes. Very easy.

2 cups sugar (doesn’t have to be caster sugar, I use regular)
1 cup salad oil (I use sunflower oil)
2 eggs
2 tsp. vanilla
3 cups plain flour
2 cups grated zucchini
3 tsp. cinnamon
1 tsp. ginger
1 tsp. salt
1 tsp. baking soda (bicarb. of soda)
1/2 tsp. baking powder
1 cup chopped walnuts

Mix sugar, oil, eggs together. Add flour, spices, baking powder, baking soda alternately with the grated zucchini. When mixed, add chopped walnuts and vanilla.

Line 2 loaf pans with greaseproof paper. Fill pans equally with mixture.
Bake at 350F (approx. 50-60 mins. til cake tester comes out clean).

~~This keeps really well in the fridge and/or can be frozen~~

Thank you so much for this lovely recipe! I will certainly give it a try and I'm especially pleased that it can freeze. Will be a great stand-by for unexpected guests for tea. I love the idea of using vegetables in baking, nice and healthy and a good way to get kids to take in veggies!

Apparently ... if you're on a diet you can still eat this yummy loaf as long as you pretend it's a crispbread! Lol!

This loaf would not last long enough to go into the freezer in my house. There are just the two of us!!! I look forward to trying it out.

It doesn't last long here either, Linda. Fluff, I've not been called a 'pixie' before...kinda has a nice ring to it! lol It at least draws attention to the freezeability of the loaf :)

Eedee....I thought I'd posted a comment to your post but it doesn't seem to be I'll try again! It is a great stand-by and another way to use up the zucchinis that people grow and want a change from a straight veggie dish.

My grandkids won't touch it unfortunately....they don't like the nuts....but I have never made it without as I like the different texture/taste they provide.
